Pineapple Coconut Smoothie

Or not. Your choice. You could totally turn these dairy free smoothies into an adults-only summer treat by adding a shot or two of rum. But, if you do this you should probably make a virgin batch for the kids anyway because they are going to want this refreshing fruity goodness too!

Or maybe turn this smoothie into popsicles! Again, with or without the rum – just make sure to label them well if you do both! 



Pineapple Coconut Smoothie

Ingredients

  • 1 1/2 cups full fat coconut milk (I like Golden Star, which contains no additives, gums or thickeners)
  • 3 cup frozen pineapple chunks
  • 1 banana , frozen
  • 1/2 tsp vanilla , optional

Instructions

  • Blend all ingredients in a high speed blender until smooth, preferably on the "Frozen" setting if your blender has one*.
  • Enjoy immediately!
