Cajun Mac & Cheese Is One Of The Best Things We've Ever Made

At Delish, you can't really trust when one of us blurts out "This is the best thing we've ever made!" because we say that once a week at a minimum. When you're cooking this much, it's impossible to not black out and go into a food coma on the reg. After we finished devouring this cajun mac—in pure silence—we knew that we had developed a winner.

I love cajun seasoning with anything (especially this angel hair), so it wasn't hard for me to envision this cheesy mess of a mac. It was tough, however, to choose which proteins to include because I know people have particular cajun feelings. I settled on shrimp and andouille sausage because also adding chicken seems like way too much and shrimp 'n sausage make an excellent match.



Cajun Mac & Cheese

Ingredients

  • 1 lb. cavatappi or other short-cut pasta
  • 1 tbsp. extra-virgin olive oil
  • 2 bell peppers, diced
  • 1/2 white onion, diced
  • kosher salt
  • Freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 lb. andouille sausage, sliced
  • 1/2 lb. peeled and deveined medium shrimp, tails removed
  • 1/4 c. Sliced green onions
  • 1 tbsp. Cajun seasoning
  • 2 tbsp. butter
  • 2 tbsp. all-purpose flour
  • 2 c. milk
  • 1 1/4 c. shredded Cheddar
  • 1 1/4 c. Shredded Monterey Jack
  • 1/4 c. panko bread crumbs
  • 2 tbsp. melted butter
