These super easy bar cookies can be made with any fruit or berry. I think blueberries and peaches would also be nice – but that idea came to me after I finished making these. Oh no – guess I’ll have to make another batch! These bars start with a simple crumb crust. Mix together flour, sugar, baking powder, cinnamon and salt. Cut in cold cubed butter until the mixture resembles coarse sand.

Ingredients
For the crust:
1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
3 cups unbleached all-purpose flour
1 cup butter, cold, cut into cubes
1 large egg, lightly beaten
For the peach layer:
5 large peaches, peeled and diced
1/2 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon fresh lemon juice
1/4 teaspoon ground cinnamon
For the icing: (optional)
1 cup powdered sugar
1/4 teaspoon almond extract
1 tablespoon milk (more or less for desired consistency)
Instructions
- Preheat oven to 350 degrees if using a glass pan, or 375 degrees for a metal pan. Lightly grease or spray a 13x9-inch baking pan and set aside.
