Pineapple Peach Oatmeal Smoothie

A couple of weeks ago, Laura was out of town for the week for work.  In years past, that would have meant me living like a bachelor again.  But not anymore.  Now it meant solo-Dad duty as I chased Robbie around the house and the yard.  That’s ok, though.  The little guy and I had some great bonding time!  In fact, when Laura came home, Robbie hid behind my leg and started crying.  (Don’t worry…he loves his Mom.  I think he was just surprised to see her.)

This Pineapple Peach Oatmeal Smoothie includes toasted oats for an extra layer of flavor. It's perfect for warm summer days!We’ve had a bunch of rain this week, but fortunately the weather was great when Laura was out of town.  Robbie and I enjoyed cruising around the yard each afternoon.  It was a great way to show him new things…and also a great way to entertain him until dinnertime!  One of the things I taught him during the Daddy-Robbie Week of Fun was how to smell flowers.  He calls them babbers, but it’s close enough.  As you parents out there know, you become an expert at translating toddler talk into English.  So once Robbie understood flowers, I taught him to go up and smell them.  And now he can’t stop smelling flowers!

In fact, Robbie’s love of smelling flowers has led him to smelling everything that’s green in the yard…flower or not.  The leaves on the hostas?  Robbie smells ’em.  The leaves on the tulips?  Robbie smells ’em.  (The tulips themselves have already flowered, but the leaves are still there.)  And then he took it to a whole new level by smelling (and then picking) a dandelion.  I mean, I get it!  It does look like a flower.  And he was so proud marching around the yard with his dandelion in his hand!



Pineapple Peach Oatmeal Smoothie
Ingredients

  • ⅓ cup old-fashioned oats
  • 1 cup peaches, chopped
  • 1 cup pineapple, chopped
  • 1 banana, chopped
  • 1 (5.3 oz.) container vanilla Greek yogurt
  • ½ cup milk
  • 2 tsp vanilla extract
  • {Optional for thicker smoothie} 1 cup ice cubes

Instructions

  • Spread oats on a small baking sheet. Toast at 300°F for 6-8 minutes, or until you can smell the toasted oats.
  • Place toasted oats along with all other ingredients into blender; blend until smooth.
